Cook burned by deep-frying oil splashing

The cook tipped sliced potatoes into a deep fryer. The 180 degree oil splashed into his left eye and on his left lower arm. The potatoes were still frosty and contained water, which reacted with the hot oil. The incident caused a minor burn on his forearm and a burn in his left eye. Improvement suggestion: use safety glasses when filling a deep fryer with potato chips.
